Almond bread

Gluten free almond bread

Ingredients                                         Method

  • 3 cups (300g) almond meal
  • 1 and a half cups (180g) arrowroot powder
  • Half cup (50g) flaxseed meal
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 8 eggs
  • 4 tsp (24g) xylitol (or sugar)
  • 2 tsp apple cider vinegar
  1. Combine the almond meal, arrowroot, flax meal, salt and baking soda
  2. In a larger bowl, whisk the eggs 3-5 mins, until frothy. Stir xylitol and vinegar into the eggs
  3. Mix the dry ingredients into the wet
  4. Pour the batter into a well-greased loaf pan
  5. Bake at 175 C for 30 to 35 minutes until a toothpick inserted into the centre of the load comes out clean
