Beef and Pumpkin Massaman

An easy, rich, mild curry, high in antioxidants cooked  in a pressure or slow cooker 

Ingredients                                         Method

  • 1kg beef, diced
  • 200g red onion, diced
  • 400g pumpkin, diced
  • 90g massaman curry paste
  • 1 cup (250ml) chicken stock
  • 300g bok choy
  • 300g pak choy
  1. Combine the beef, onion, pumpkin, curry paste and stock in a pressure or slow cooker
  2. Cook for 90 minutes in a pressure cooker or 6 hours in a slow cooker
  3. Add the greens and stir into the curry until wilted
  4. Serve
