Bolognese Bake

Low carb, high fibre bolognese bake.

Ingredients                                         Method

 

Bolognese sauce

  • 2 tbsp olive oil

  • 400g onions

  • 300g red capsicum

  • 300g green capsicum

  • 2 tsp garlic

  • 500g minced beef

  • 2 tbsp tomato paste

  • 2 tins tomatoes

  • 4 tbsp fresh basil

 

  • 1.2kg aubergine

  • 400g spinach

  • 360g ricotta

  • 1 egg

  • 100g grated cheese

  • 50g parmesan

     

  1. Preheat oven 180 0C
  2. Brown mince in frying pan
  3. Add onion, capsicum and garlic, stirring until onion softens
  4. Add tomato paste and tomatoes, bring to the boil and simmer for 20 minutes
  5. Stir in the basil and season
  6. Cut the aubergine into 2mm thick slices and cook on a heated, oiled grill plate until just tender
  7. Microwave the spinach until wilted, squeeze as much liquid as possible from the spinach.
  8. Combine spinach, ricotta and egg in a bowl and season
  9. Layer Bolognese sauce, aubergine and spinach mixture
  10. Top with cheese and parmesan
  11. Bake for 20 minutes, or until the cheese is browned
