Cauliflower pizza
Cauliflower pizza base lower carbohydrate and calories than traditional pizza
Ingredients Method
Pizza base
- 500g cauliflower rice
- 1 egg
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp salt
- 1/2 tsp garlic powder
Topping
- 2 tbsps tomato paste
- 20g red onion
- 40g red pepper
- 20g spinach
- 75g bacon pieces
- 100g cooked chicken
- 50g grated cheese
- Place the cauliflower rice in a bowl and microwave – 2 and a half minutes from fresh. 5 minutes from frozen
- Leave to cool
- Place the cooled cauliflower in a clean tea towel and squeeze out the excess liquid
- Place the cauliflower in a bowl with the egg and herbs and mix
- Line a pizza tray with baking paper and evenly spread the mixture across the tray
- Bake the base for 15 minutes at 200 C
- Remove base from the oven and spread the tomato paste evenly over the base
- Arrange the rest of the ingredients over the top of the base, finishing with the cheese
- Return to the oven and cook for another 10 minutes, or until golden
