Chick pea salad
The chick peas make this salad high in protein and fibre.
Ingredients Method
- 1 tin (410g) chick peas
- 50 g fresh mint
- 50g fresh basil
- 150g fetta
- 250g tomatoes
- 100g red onion
- 1 small red chilli
- Finely chop red onion and chilli
- Chop the tomatoes and add the onion and chilli
- Drain and rinse the chick peas
- Tear the basil and mint into the rest of the salad and mix
- Crumble the feta into the salad and season with salt and pepper
