Chick pea salad

The chick peas make this salad high in protein and fibre.

Ingredients                                         Method

  • 1 tin (410g) chick peas
  • 50 g fresh mint
  • 50g fresh basil
  • 150g fetta
  • 250g tomatoes
  • 100g red onion
  • 1 small red chilli
  1. Finely chop red onion and chilli
  2. Chop the tomatoes and add the onion and chilli
  3. Drain and rinse the chick peas
  4. Tear the basil and mint into the rest of the salad and mix
  5. Crumble the feta into the salad and season with salt and pepper
