Cranberry, chocolate and pecan squares

Clean cranberry, chocolate and pecan squares with no added sugar

Ingredients                                         Method

  • 2 and a half cups (50g) puffed rice
  • Half cup (60g) chopped pecans
  • Half cup (65g) pepitas
  • Quarter cup (35g) dried chopped cranberries
  • 2 tbsp LSA
  • 1 tbsp white sesame seeds
  • Half cup (180g) honey
  • 1 tsp vanilla extract
  • Half tsp salt
  • 100g shredded coconut
  • 45g sugar-free dark chocolate, chopped
  1. Preheat oven to 150degrees C
  2. Grease and line a square cake tin
  3. Combine the puffed rice, pecans, pepitas, cranberries, LSA and sesame seeds in a large bowl
  4. Place honey, vanilla and salt in a small pan over a medium heat. Cook for 2 minutes, stirring continuously until it starts to simmer.
  5. Pour the honey over the dry ingredients and mix thoroughly. Cool for 5 minutes
  6. Stir in chocolate and transfer mixture to cake tin, pressing it down firmly
  7. Bake for 30 minutes or until golden brown. Cut into 20 bars
