Goan fish curry
Fish cury with plenty of veggies and high protein basa
Ingredients Method
- 4 tsp ground coriander
- 2 tsp ground cumin
- 2 tsp dried chillis
- 4 tbsp grated fresh ginger
- 4 tsp garlic
- 2 tsp turmeric
- 2 tbsp olive oil
- 400g sliced onion
- 410g tin tomatoes
- 400ml coconut milk
- 2 tbsp sugar
- 2 fresh green chillies
- 1kg basa cut into pieces
- 200g green beans
- Combine coriander, cumin, dried chillies, ginger, garlic and turmeric in a small bowl
- Heat the oil in a pan and cook the onion until golden.
- Add the spice mix and cook for 2 minutes
- Stir in tomatoes, coconut milk, sugar and fresh chillies and simmer for 5 minutes
- Add the fish and the beans and simmer until cooked through
