Mango and pork curry

Smokey and sweet curry, high in protein and loads of veggies for plenty of fibre 

Ingredients                                         Method

  • 2 tbsp tbsp peanut oil
  • 4 tbsp yellow curry paste
  • 800ml coconut cream
  • 1kg pork fillet
  • 200g sugar snap peas
  • 1kg mango
  • 300g zucchini
  • 2 red chillis
  • 250g bean sprouts
  1. Heat the oil over a medium-high heat and add the curry paste. Cook, until fragrant
  2. Stir in coconut cream and bring to the boil
  3. Add diced pork to the sauce and simmer for 4 minutes, or until the pork is cooked.
  4. Add the peas, mango, zucchini, chilli and bean sprouts
  5. Stir until heated through
