Pork and Zucchini Fajita

Quick and easy one pot dinner, high in protein

Ingredients                                         Method

  • 500g zucchini, spiralised

  • 150g red capsicum, diced

  • 100g green capsicum, diced

  • 600g minced pork

  • 40g fajita spice

  • 60g cheese

  1. Heat the oven to 2000C
  2. Place the zucchini in a roasting dish
  3. Sprinkle over the capsicum
  4. In a separate bowl mix the meat and spice
  5. Sprinkle the meat and spice mixture over the vegetables
  6. Top with cheese
  7. Bake for 30 minutes
